أحبَّ جاورجيوس الله منذ نعومة أظفاره فلما شاء والداه تزويجه كُرهاً فرَّ واقتبل الأسكيم الرهباني في إحدى الأديرة. انكبَّ على حياة النسك بكل قواه، صوماً وأتعاباً وتأملاً في الكتاب المقدَّس وصلاةً ودموعاً. سلك في الفضيلة بكل جوارحه فشعَّ حضور الله من خلاله. كثيرون لدى احتكاكهم به، وجدوا التوبة. أما هو فإن مال إلى الهدوئية، الصمت آثر التواري، من جديد، واعتزل في جبل الملاون الذي يظن أنه في البليوبونيز.
طريقة نسكه وفضيلته جذبت إليه رجالاً عطاشاً إلى الله. هؤلاء أتوه راغبين في الإنضمام إليه ورجوه أن يوجههم في النسك والصلاة. فرضي أن يتخذهم لأنه عرف أن مجيئهم من الله كان. وقد أعطى كلاً منهم قانوناً يناسب تقدمه في الفضيلة، وعيَّن لهم قلالي في نواحي منسكه. وقد جعلته النعم التي أسبغها الرَّب الإله عليه وكذلك حسن تميزه مشهوراً بين كبار قومه، وحتَّى لدى الإمبراطور. لذا درجوا على استشارته في شتّى أمورهم وكان يوجه إليهم رسائل مشبعة بالغذاء الروحي ويمدَّهم بنصائحه الحكيمة في كيفية تجسيد الإنجيل في شؤون الحكم على أساس الصلاح والإحسان.
تنبأ القديس جاورجيوس برحيله قبل الساعة بثلاث سنوات وأعدّ تلاميذه ليتمكَّنوا من الإستمرار في سعيهم من دون عون منظور من أبيهم الروحي. ثمَّ مرض مرضاً طفيفاً فاستدعوا كلُّ نسّاك جبل الملاون وبعدما وعظهم، للمرّة الأخيرة، أن لا يتهاونوا بأي من الأمور التي ترضي الله وتقضي إلى الخلاص، استودع الرَّب الإله روحه بسلام.
